Roasted pork is a beloved dish across various cultures, yet the traditional roasting process can contribute significantly to environmental pollution through carbon dioxide and particulate emissions. This research aims to design and fabricate a continuous pork roaster employing infrared heating technology, intended for community enterprises, while ensuring efficiency and capacity within acceptable limits. The experimental setup involves a continuous pork roaster utilizing three infrared heaters, each with a power of 1000W, culminating in a total capacity of 3000W. The results demonstrate a production capacity of approximately 400 pieces of roasted pork per hour, with the quality of the product meeting community standards. The innovative roaster not only reduces pollution associated with conventional roasting methods but also aids in maintaining cleaner air and environmental conditions. Furthermore, it presents economic advantages, such as reduced operational costs and production times, thereby enhancing productivity. The findings highlight the potential for such technology to support small and micro community enterprises in achieving sustainability and competitiveness in the market.
