Edible wild mushrooms collected in Nagano Prefecture were examined for their elution characteristics of radioactive cesium (Cs) and potassium (K) when immersed in water. The study aimed to understand how these elements are released from different processing methods, including microwave, drying, freezing, and raw treatments. Utilizing an auto radiography method (ARG) for cesium detection and total reflection X-ray fluorescence analysis for potassium, the mushrooms were sampled at multiple immersion time points. Results indicated that radioactive Cs was effectively eluted into the water from treated mushrooms, with a significant reduction in photo-stimulated luminescence density observed in the raw mushrooms compared to treated groups. The elution rates highlighted that over 80% of Cs was released from treated mushrooms, while K remained below 20% in the control samples. Furthermore, it was suggested that the structural integrity of the mycelium cells impacted the elution process for both elements. Overall, the findings reinforce the notion that processing methods can facilitate the release of contaminants from edible mushrooms, with implications for food safety and consumption patterns.
