The study investigates the impact of carefully selected fatty acids on the polymerization stability of esters used in various applications such as release agents and emulsions. The primary objective is to analyze how the composition of these fatty acids affects the performance of the resulting products, particularly under conditions that promote undesirable reactions like polymerization and carbonization. Utilizing viscosity measurements, the research explores the effects of incorporating different concentrations of a spermoil substitute into release emulsions, demonstrating significant improvements in releasing performance. The results reveal that esters with enhanced polymerization stability significantly decrease the viscosity increases that typically occur upon exposure to heat and air, thus preventing the formation of rubber-like films that adhere stubbornly to surfaces. These findings underline the importance of employing tailored fatty acid compositions in creating high-quality release agents and bread cutting oils, contributing to advancements in product formulations across various industries. The implications of these results suggest potential pathways for optimizing the stability and effectiveness of emulsions in application scenarios that require consistent performance. The study concludes with recommendations for further research on the molecular interactions that underpin these observed effects.
