ABSTRACT: The restaurant business in Indonesia is rapidly growing, with the food and beverage industry reaching a development rate of 8.67% in 2018, surpassing national economic growth. Despite this growth, many restaurants face financial performance problems related to high procurement costs and a lack of clear guidance on how to improve financial performance through purchasing activities. This study investigates the relationship between employees’ purchasing skills and the implementation of strategic purchasing, and examines their impact on restaurant financial performance. Using a Structural Equation Modeling–Partial Least Square (SEM-PLS) approach, data were collected from 60 restaurants in Semarang. The results show that technical knowledge is the purchasing skill that significantly enhances the implementation of strategic purchasing and, in turn, improves restaurant financial performance. The findings also confirm that implementing strategic purchasing positively affects financial performance. This study provides practical recommendations for restaurants on enhancing procurement capabilities and adopting strategic purchasing to improve financial outcomes.
